Crab Cakes

Pan-fried or baked, this version with a side of mayo and Old Bay or tartar sauce has found its special corner in our menus at home. To accompany we put some green salad and even some mac & cheese.

- 225 g lump crab meat
- 1 egg
- 5 g Worcestershire sauce
- 15 g Dijon mustard
- 15 g mayonnaise
- 1/2 lemon juiced
- 15 g butter melted
- 3 sprigs parsley finely chopped leaves
- 1/2 shallot finely diced
- 25 g panko bread crumbs
- 15 g Old Bay

In a large bowl combine all ingredients to incorporate them.
Portion the crab to about 8 to 10 scoops approximately and place them in a lined baking sheet.
In a preheated oven at 190 °C/375 °F bake for about 15 minutes. If your oven has a "broiler" setting, you may broil them for a couple additional minutes per side and they will come out crispier. If you'd rather pan-fry them, this is also possible.
Additional Old Bay seasoning may be sprinkled on top.

Old Bay seasoning is a mix of spices that is quite popular in the Washington-Baltimore area, but, if you cannot find it at the stores near your place, here is a homemade version of the mix you can use:
1 tbsp celery salt
1/4 tsp paprika
1/8 tsp ground black pepper
1/8 tsp ground Cayenne
Pinch ground mustard
Pinch nutmeg or mace
Pinch ground cinnamon
Pinch ground cardamom
Pinch ground allspice
Pinch ground ginger
2 tbsp ground bay leaf
1 tsp ground white pepper
1/2 tsp red pepper flakes
Leftovers of this spice mix can be stored for a few months in an airtight container in a dry place with no direct light.
