King’s Cake… or should I say Rosca de Reyes?
Who hasn’t heard about Galette des Rois from France or Roscón de Reyes from Spain? Well, in Mexico we have our own version of it, and it’s called Rosca de Reyes. Traditionally cut at homes on the Eve of January 5, families get together to enjoy this traditional cake with tons of significance and religious mysticism, and yes, we do like the cup of hot chocolate that goes with. In September 2021, I returned to teaching in-person classes after the COVID-19 forced hiatus. This time, I did it at Culinaria Cooking School, a school which specializes in amateur classes for home cooks as young as 9 years-old.
